Adriatico represents a new generation of Amaretto liqueur. Produced from 100% natural Italian ingredients, including almonds from Puglia. Hand-picked in the Pugliese countryside, the almonds are roasted slowly before being macerated and distilled, then blended with notes of vanilla, cinnamon, cocoa and a hint of coffee. Finally, a pinch of salt straight from the Margherita di Savoia saltworks adds a delicate touch, conjuring up the nearby Adriatic Sea. Our Guatemalan rum is made with first press sugar cane fermented with yeast from the pineapple plant. This creates a light, floral and smooth rum with a natural subtle sweetness to which we add selected classic, young Caribbean rums to give classic rum character and strength, creating an elegant, balanced blend.

We blend these rums with all-natural toasted coconut and pure, sustainably sourced coconut water which extends the fresh, coconut flavour and gives the rum a wonderfully smooth mouthfeel.

The flavours are so good we make sure we don't hide them behind the wall of sugar found in many other coconut rums.

The anCnoc 18 Year Old has matured in Spanish oak ex-sherry casks and American oak ex-bourbon barrels and has been bottled in its most natural form, neither chill-filtered nor coloured. As a result this dram may develop a light haze with the addition of water or if kept at a cold temperature. This haze is a natural characteristic of whisky that is non chill-filtered.

THE FRUIT: Created at the beginning of the ’90s, Mara of the Woods is a juicy strawberry, very sweet and very fragrant. Its uniqueness is its fragrance of wild strawberries. It also has musky notes which will seduce young and old alike. This light red fruit has a slightly conical shape which distinguishes it from other strawberries on the stalls.

SEASONALITY: ARHUMATIC’S Fragaria Silvarum is offered from the month of July after the first harvest of strawberries.

Founded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. We love gingerbread. Well, to be specific, we love the sort of ginger cookies that we used to get at the Christmas markets in cities throughout Germany and Northern Europe. In Norway, these ginger cookies were called pepperkaker… or pepper cakes.

Of course, nothing can beat having access to fresh ginger juice when you’re making a cocktail – but it isn’t something that most people have laying around their kitchen, and if you do make ginger juice, it starts to lose its flavour almost immediately. By using a combination of dried gingers and alcohol, we’ve been able to create a shelf-stable ginger bitter that can bring that bite to warming winter cocktails – especially those made with rum and bourbon – yet also work beautifully in classic bucks and mules.

Avid beer drinkers know that certain varieties of hops, when used in high concentration, deliver strong grapefruit flavours. We’ve decided to use the grapefruity quality of Pacific Northwest hops along with grapefruit peel to help create a concoction with layer upon layer of vegetal bitterness. Designed to enhance young (silver) rums, tequilas and mezcal, the Hopped Grapefruit bitters play well with most cocktails where you need a little citrus punch. Try it in a daiquiri, gimlet, or even a gin and tonic (with a splash of maraschino).

A unique celery-based creation from Bittermens that combines celery, apple and vinegar.

Thinking about the Lower East Side, one of the classic flavours during the tenement era was Dr Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, that it was nicknamed the Jewish Champagne. Though the only flavour that is declared is celery seed, we always got a sense that there was a bit of ginger and apple in there somewhere.

Wrapping all of this history together, we decided to take all of these ideas and run with them. We took an idea of a brine, a shrub and a classic soda and decided to dedicate it to Orchard Street, home of the Lower East Side Tenement Museum. Funny that something that we made to honour the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!

Bobby's Schiedam Dry Gin is an interpretation of creator Sebastiaan's grandfather, Bobby's homemade gin. Born in Indonesia, Bobby immigrated to the Netherlands in the 1950's, but longed for a spirit with the taste of home. So, he began infusing Dutch jenever with Indonesian herbs, thus creating his own gin. In 2012, Sebastiaan traveled to Holland to meet master distiller of Herman Jansen. Together, they created today's version of Bobby's recipe using Indonesian botanicals such as lemongrass, cloves, coriander, cubeb pepper and cinnamon.

A harmonious blend of our Singapore Dry Gin with lavender and butterfly pea flower. Lavender, known for its calming properties, adds a floral top note to the gin. With the addition of citrus, its colour changing properties are revealed as it morphs into a soft lilac shade. Naturally infused with no preservatives, do note that the colour will fade over time. Blend and Maturation: A seamless blend of Coffey and pot still rums aged from 6 to 11 years in Bourbon and Port casks. The majority of the 1931 blend comes from traditional molasses rum, while the hidden spunk of the spirit is influenced by the inclusion of Lucian agricultural rum produced from fresh sugarcane growing in the fields adjacent to the distillery.

Tasting Notes: Vibrant medium gold in colour with a subtle bronze hue, the character of the rum is highlighted by the expressive aromas of honied raisins and vibrant toasty oak notes followed by hints of leather, spice and tobacco. A well-balanced mid-palate provides structure around flavours of rich sultana fruit with hints of crème caramel and buttery oak. Blend and Maturation: The production begins with a careful selection of 5 varieties of the finest quality apples in the Pays d’Auge region of Normandy in France. These apples are picked at their peak and then undergo natural fermentation. The distillation process takes place between the beginning of winter and June 30th of the following year. Double distillation occurs in a Charentais pot followed by aging in French Limousin or Troncais oak casks, first in new casks and then older casks for a longer period of slow maturation.

This gin is in fact a cider apple eau-de-vie from Normandy in which juniper berries, ginger, vanilla, lemon, cardamom, cinnamon, rose petals and almonds have been macerated. Remarkably well-balanced, it simultaneously reveals finesse and incredible aromatic precision.

The 19 aromatics that make up Citadelle are infused, according to their profile, between one and four days – a crucial time so that Citadelle can acquire its distinguished profile. It is then distilled in small copper stills over open flames in order to develop its suppleness and voluptuous character in the mouth.

Citadelle Gin exudes delicate aromas of fresh flowers highlighted by more assertive citric scents. Once served, it emanates more intense, herbaceous notes of juniper and anise; then, the spicy cinnamon side softens the nose, bringing a very gourmand dimension to the gin. On the palate, the juniper cedes to a long, voluptuous, spicy fragrance.

Citadelle Old Tom is inspired by our research into the popular gin traditions of 18th and 19th century England. Concocted from a gin aged in various woods, we have added toasted Caribbean cane sugar, also barrel-aged, for an incredibly gourmet sweetness.

Clairin Sajous is an intriguing style of rhum agricole from Haiti - they press the sugar cane, and then reduce the juice over fires fuelled by the remains of the sugar cane! It's then fermented using wild yeasts and double distilled before being bottled at full-strength.

A peaty offering and a vatted malt created by the renowned John Glaser, of Compass Box. The Peat Monster contains whisky from secret distilleries (all very cloak and dagger). They can tell us that some was from the village of Port Askaig in Islay, with some south coast Islay whisky too, vatted with Ardmore. This was matured in a mix of first fill and refill American oak casks.

Compass Box's delicious Spice Tree was briefly illegitimate, according to SWA regulations. After adjusting its creation, Spice Tree is back, and better than ever. It's a blended malt made from Highland malt whiskies, aged in specially made casks with new French oak heads.

In April 2015, it was named Best Blended Malt Scotch at the San Francisco World Spirits Competition.
