This sugar is made from sugarcane from the world's best sugar growing regions. It is produced for The Providore by Marukichi Sugar in Tokyo. They differ from regular refined sugar in that the raw sugarcane juice is not centrifuged to separate the sugar crystals from the mother liquor, but simply filtered and then boiled down so that the richness and flavor of the syrup can be savored to the full. By adjusting the proportion of mother liquor left in the sugar, we have created flavors fragrances and colors.
