Our Guatemalan rum is made with first press sugar cane fermented with yeast from the pineapple plant. We love gingerbread. Well, to be specific, we love the sort of ginger cookies that we used to get at the Christmas markets in cities throughout Germany and Northern Europe. In Norway, these ginger cookies were called pepperkaker… or pepper cakes.
Of course, nothing can beat having access to fresh ginger juice when you’re making a cocktail – but it isn’t something that most people have laying around their kitchen, and if you do make ginger juice, it starts to lose its flavour almost immediately. Thinking about the Lower East Side, one of the classic flavours during the tenement era was Dr Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, that it was nicknamed the Jewish Champagne. Though the only flavour that is declared is celery seed, we always got a sense that there was a bit of ginger and apple in there somewhere.
Wrapping all of this history together, we decided to take all of these ideas and run with them. We took an idea of a brine, a shrub and a classic soda and decided to dedicate it to Orchard Street, home of the Lower East Side Tenement Museum. Funny that something that we made to honour the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!

Bobby's Schiedam Dry Gin is an interpretation of creator Sebastiaan's grandfather, Bobby's homemade gin. Born in Indonesia, Bobby immigrated to the Netherlands in the 1950's, but longed for a spirit with the taste of home. So, he began infusing Dutch jenever with Indonesian herbs, thus creating his own gin. In 2012, Sebastiaan traveled to Holland to meet master distiller of Herman Jansen. Together, they created today's version of Bobby's recipe using Indonesian botanicals such as lemongrass, cloves, coriander, cubeb pepper and cinnamon.

Chairman’s Reserve Limited Edition 1931 is a tribute to the rum philosophy and craft established by our founder, Denis Barnard, when he established his distillery in 1931, which has become today one of Saint Lucia’s most cherished treasures, St. Lucia Distillers.
Blend and Maturation: A seamless blend of Coffey and pot still rums aged from 6 to 11 years in Bourbon and Port casks. The majority of the 1931 blend comes from traditional molasses rum, while the hidden spunk of the spirit is influenced by the inclusion of Lucian agricultural rum produced from fresh sugarcane growing in the fields adjacent to the distillery.
Tasting Notes: Vibrant medium gold in colour with a subtle bronze hue, the character of the rum is highlighted by the expressive aromas of honied raisins and vibrant toasty oak notes followed by hints of leather, spice and tobacco. Blend and Maturation: The production begins with a careful selection of 5 varieties of the finest quality apples in the Pays d’Auge region of Normandy in France. These apples are picked at their peak and then undergo natural fermentation. The distillation process takes place between the beginning of winter and June 30th of the following year. Double distillation occurs in a Charentais pot followed by aging in French Limousin or Troncais oak casks, first in new casks and then older casks for a longer period of slow maturation.
Tasting Notes: Amber colour. Delicate aromas of apples. Fruity and refreshing on the palate.

Nose: Proud of its Normandy roots, the nose opens with wafts of apple. Little by little, it becomes liquorice-inspired, herbaceous (juniper) and peppery
Taste: Full of energy, the opening on the palate is floral (apple blossom) and fruity (raspberry, blackcurrants). The back of the palate offers freshly cut quarters of apple and a voluptuous nose (apple tart, quince jelly).
Finish: Pure and refreshing finish
This gin is in fact a cider apple eau-de-vie from Normandy in which juniper berries, ginger, vanilla, lemon, cardamom, cinnamon, rose petals and almonds have been macerated. Remarkably well-balanced, it simultaneously reveals finesse and incredible aromatic precision.

The 19 aromatics that make up Citadelle are infused, according to their profile, between one and four days – a crucial time so that Citadelle can acquire its distinguished profile. It is then distilled in small copper stills over open flames in order to develop its suppleness and voluptuous character in the mouth.
Citadelle Gin exudes delicate aromas of fresh flowers highlighted by more assertive citric scents. Once served, it emanates more intense, herbaceous notes of juniper and anise; then, the spicy cinnamon side softens the nose, bringing a very gourmand dimension to the gin. On the palate, the juniper cedes to a long, voluptuous, spicy fragrance.

Citadelle No Mistake Old Tom Gin - 500ml

Taste: Full and elegant, with a bitter-sweet profile of preserved lemon zest, anise and almond. The palate evolves with spicy notes of nutmeg, cinnamon and cubeb pepper.
Finish: Its long finish reveals floral, spicy and woody accents, with notes of violet, angelica and liquorice.
Citadelle Old Tom is inspired by our research into the popular gin traditions of 18th and 19th century England. Concocted from a gin aged in various woods, we have added toasted Caribbean cane sugar, also barrel-aged, for an incredibly gourmet sweetness.
This tribute by Alexandre Gabriel to Charles Dickens, who spun tales about England’s mania for gin and its various nicknames, offers an ideal melding of flavours. “No Mistake,” Dickens might have said if he had the chance to taste our Old Tom.
