Del Professore Madame is a unique gin for which only the Jerry Thomas Project has the secret recipe. It is composed entirely of berries picked in Italy. The 16 botanicals used are cold-infused in a juniper distillate with herbs and spices. It undergoes a final filtration that is gentle so as to maintain the maximum aromas. In order to create a unique product, the recipe is changed slightly for every new batch. Each batch produces less than 3,000 bottles.

Founded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. The gin takes a Dutch style rye spirit base combined with with juniper, lavender, anise, sarsaparilla, orange peel and cardamom, and the botanicals are steeped in grain spirit for 48 hours before they are redistilled. A pretty intriguing tipple, with a very handsome Gatsby-esque bottle. A fabulous gin to go its eponymous cocktail.

Blend and Maturation: The production begins with a careful selection of 5 varieties of the finest quality apples in the Pays d’Auge region of Normandy in France. These apples are picked at their peak and then undergo natural fermentation. The distillation process takes place between the beginning of winter and June 30th of the following year. Double distillation occurs in a Charentais pot followed by aging in French Limousin or Troncais oak casks, first in new casks and then older casks for a longer period of slow maturation.

Blend and Maturation: This tropical rum made from molasses and aged in bourbon barrels. Rum is a blend of the contents of two barrels from two wineries - from the island of Fiji and Indonesia. On the island of Fiji, sugar cane is grown, from which sugar is made, and from molasses, in turn, rum is produced. The drink is bottled without cold filtration with a barrel strength of 43%.

Tasting Notes: Brilliant golden amber colour. Light and well-melted woodiness on the nose. Notes of dried banana, black pepper and cinnamon on the palate. Notes of roasted pineapple, ripe fruit and coconut on the finish.

A rather cheeky new addition from That Boutique-y Gin Company: Spit-Roasted Pineapple Gin. Popular in the 1920s, but long since forgotten, pineapple gin is back with a 21st-century twist. Whole pineapples are roasted on a spit with Demerara sugar until a beautiful caramelisation occurs. The pineapple is then combined with some bold and bright gin. The result? They are distilled by Stranger & Sons as part of a collaboration with Four Pillars Distillery. This can be considered the second release of the collaboration, in March last year Four Pillars released their Distiller Series Gin - Spice Trade Gin - made with Indian spices sent to the Four Pillars team from the Stranger & Sons team in Goa. For Trading Tides, the Four Pillars team has returned the favour and shipped Australian botanicals to the Stranger & Sons team. The result is a citrus-forward gin based on Australian botanicals like lemon myrtle and river mint with notes of archetypal Indian ingredients such as mangosteen, kokum and tamarind.

To honour Alexandre Gabriel’s 20th anniversary as Master Blender, we created Plantation XO 20th Anniversary using a blend of quintessential extra-old rums from Barbados.

Over a decade later, we are still very proud of this rum as it continues to receive praises and top awards.

First aged in bourbon casks in Barbados for many years, this rum is then sailed across the ocean in barrels to the southwest of France to be further matured in small Ferrand French oak casks.

This centuries-old “double ageing“ process imparts incredible smoothness and complexity. It unveils a sophisticated palate of chocolate, vanilla, ripe banana, roasted coconut and a hint of fresh mango notes. With a remarkably long finish, Plantation XO 20th Anniversary is truly a rum to savor.
