Del Professore Madame is a unique gin for which only the Jerry Thomas Project has the secret recipe. It is composed entirely of berries picked in Italy. The 16 botanicals used are cold-infused in a juniper distillate with herbs and spices. It undergoes a final filtration that is gentle so as to maintain the maximum aromas. In order to create a unique product, the recipe is changed slightly for every new batch. Each batch produces less than 3,000 bottles.

Founded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. The gin takes a Dutch style rye spirit base combined with with juniper, lavender, anise, sarsaparilla, orange peel and cardamom, and the botanicals are steeped in grain spirit for 48 hours before they are redistilled. A pretty intriguing tipple, with a very handsome Gatsby-esque bottle. A fabulous gin to go its eponymous cocktail.

Double distillation occurs in a Charentais pot followed by aging in French Limousin or Troncais oak casks, first in new casks and then older casks for a longer period of slow maturation.

To honour Alexandre Gabriel’s 20th anniversary as Master Blender, we created Plantation XO 20th Anniversary using a blend of quintessential extra-old rums from Barbados.
Over a decade later, we are still very proud of this rum as it continues to receive praises and top awards.
First aged in bourbon casks in Barbados for many years, this rum is then sailed across the ocean in barrels to the southwest of France to be further matured in small Ferrand French oak casks.
