Our Guatemalan rum is made with first press sugar cane fermented with yeast from the pineapple plant. We blend these rums with all-natural toasted coconut and pure, sustainably sourced coconut water which extends the fresh, coconut flavour and gives the rum a wonderfully smooth mouthfeel.

The flavours are so good we make sure we don't hide them behind the wall of sugar found in many other coconut rums.

The anCnoc 18 Year Old has matured in Spanish oak ex-sherry casks and American oak ex-bourbon barrels and has been bottled in its most natural form, neither chill-filtered nor coloured. As a result this dram may develop a light haze with the addition of water or if kept at a cold temperature. This haze is a natural characteristic of whisky that is non chill-filtered.

A collision of waxy dark chocolate, warm blackcurrants and muscovado sugar pulls you under its spell with a burst of plump cherries and earthy pine needles leaping from its depths. Taste: Torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue with its intense tastes and textures. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds. THE FRUIT: Created at the beginning of the ’90s, Mara of the Woods is a juicy strawberry, very sweet and very fragrant. Its uniqueness is its fragrance of wild strawberries. It also has musky notes which will seduce young and old alike. This light red fruit has a slightly conical shape which distinguishes it from other strawberries on the stalls.

SEASONALITY: ARHUMATIC’S Fragaria Silvarum is offered from the month of July after the first harvest of strawberries.

Founded in 2006, Aviation gin takes its name from the Aviation cocktail, which was created in the 1900s. We love gingerbread. Well, to be specific, we love the sort of ginger cookies that we used to get at the Christmas markets in cities throughout Germany and Northern Europe. In Norway, these ginger cookies were called pepperkaker… or pepper cakes.

Of course, nothing can beat having access to fresh ginger juice when you’re making a cocktail – but it isn’t something that most people have laying around their kitchen, and if you do make ginger juice, it starts to lose its flavour almost immediately. By using a combination of dried gingers and alcohol, we’ve been able to create a shelf-stable ginger bitter that can bring that bite to warming winter cocktails – especially those made with rum and bourbon – yet also work beautifully in classic bucks and mules.

We’ve decided to use the grapefruity quality of Pacific Northwest hops along with grapefruit peel to help create a concoction with layer upon layer of vegetal bitterness. Designed to enhance young (silver) rums, tequilas and mezcal, the Hopped Grapefruit bitters play well with most cocktails where you need a little citrus punch. Try it in a daiquiri, gimlet, or even a gin and tonic (with a splash of maraschino).

A unique celery-based creation from Bittermens that combines celery, apple and vinegar.

Thinking about the Lower East Side, one of the classic flavours during the tenement era was Dr Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, that it was nicknamed the Jewish Champagne. Though the only flavour that is declared is celery seed, we always got a sense that there was a bit of ginger and apple in there somewhere.

Wrapping all of this history together, we decided to take all of these ideas and run with them. We took an idea of a brine, a shrub and a classic soda and decided to dedicate it to Orchard Street, home of the Lower East Side Tenement Museum. Funny that something that we made to honour the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!

Bobby's Schiedam Dry Gin is an interpretation of creator Sebastiaan's grandfather, Bobby's homemade gin. Born in Indonesia, Bobby immigrated to the Netherlands in the 1950's, but longed for a spirit with the taste of home. So, he began infusing Dutch jenever with Indonesian herbs, thus creating his own gin. In 2012, Sebastiaan traveled to Holland to meet master distiller of Herman Jansen. Together, they created today's version of Bobby's recipe using Indonesian botanicals such as lemongrass, cloves, coriander, cubeb pepper and cinnamon.

A harmonious blend of our Singapore Dry Gin with lavender and butterfly pea flower. Lavender, known for its calming properties, adds a floral top note to the gin. With the addition of citrus, its colour changing properties are revealed as it morphs into a soft lilac shade. Naturally infused with no preservatives, do note that the colour will fade over time. Chairman’s Reserve Limited Edition 1931 is a tribute to the rum philosophy and craft established by our founder, Denis Barnard, when he established his distillery in 1931, which has become today one of Saint Lucia’s most cherished treasures, St. Lucia Distillers.

Blend and Maturation: A seamless blend of Coffey and pot still rums aged from 6 to 11 years in Bourbon and Port casks. The majority of the 1931 blend comes from traditional molasses rum, while the hidden spunk of the spirit is influenced by the inclusion of Lucian agricultural rum produced from fresh sugarcane growing in the fields adjacent to the distillery.

Tasting Notes: Vibrant medium gold in colour with a subtle bronze hue, the character of the rum is highlighted by the expressive aromas of honied raisins and vibrant toasty oak notes followed by hints of leather, spice and tobacco. A well-balanced mid-palate provides structure around flavours of rich sultana fruit with hints of crème caramel and buttery oak. At first, a sweet raisin fruit, trailed by dry and tannic flavours from the oak barrels. A hint of grassy aromatic sweetness from the sugarcane distillate gives a unique, hedonistic but balanced element to the finish of the rum.

Chairman’s Legacy is a tribute to Laurie Barnard, the “Chairman” of St. Lucia Distillers who inspired and created the iconic brand Chairman’s Reserve. His vision to define and reinvent the Saint Lucian rum category was unlike anything the rum category had seen before or has seen since. While other distilleries were purchasing column stills to increase production, Laurie was investing in eclectic barrel types, small pot stills, a proprietary yeast strain, and sugarcane. He believed that the best rum was not achieved from one barrel, but by blending different components together of different ages, finishes, styles, and base materials.

Rum Blend: Chairman's Legacy showcases the art of blending pot and column still rums. In addition to traditional molasses-based rums, “Legacy” features the addition of sugarcane juice distillate, a trademark of Laurie since the day he grew sugarcane around the distillery to isolate the signature proprietary yeast Chairman's Reserve is so famous for.

Maturation: Five and six-year-old rum is tropically aged separately by batch and still type in ex-bourbon barrels before being expertly blended.

Tasting Notes: Mahogany hue in the glass. Pineapple, banana, and vanilla on the nose. Intense grilled tropical fruit and spice on the palate persist throughout a long wonderful finish.

A peaty offering and a vatted malt created by the renowned John Glaser, of Compass Box. The Peat Monster contains whisky from secret distilleries (all very cloak and dagger). They can tell us that some was from the village of Port Askaig in Islay, with some south coast Islay whisky too, vatted with Ardmore. This was matured in a mix of first fill and refill American oak casks.

Compass Box's delicious Spice Tree was briefly illegitimate, according to SWA regulations. After adjusting its creation, Spice Tree is back, and better than ever. It's a blended malt made from Highland malt whiskies, aged in specially made casks with new French oak heads.

In April 2015, it was named Best Blended Malt Scotch at the San Francisco World Spirits Competition.
