Right there in the village of Cheddar, in the heart of Somerset, the small family-run Cheddar Gorge Cheese Company has been making this traditional and authentic cheddar cheese by hand since 2003, using only fresh, raw, local milk. The terroir and environment factors here play an important role - with the local topography, soil, and weather conditions all influencing the pastures and, therefore, the quality of the cows' milk. Today, Cheddar is manufactured all over the world, and most Cheddar bears absolutely no resemblance to the original.
