Sugar and Syrup

This sugar is made from sugarcane from the world's best sugar growing regions. It is produced for The Providore by Marukichi Sugar in Tokyo. They differ from regular refined sugar in that the raw sugarcane juice is not centrifuged to separate the sugar crystals from the mother liquor, but simply filtered and then boiled down so that the richness and flavor of the syrup can be savored to the full. By adjusting the proportion of mother liquor left in the sugar, we have created flavors fragrances and colors. Ideal for baking and cooking, they are perfect to use in ways that bring out their special characteristics.

We have formed three different flavors of sugar - all retaining the taste and fragrance.

Aqua 03 Sugar Syrup is produced by natural crystallization of rock sugar made from Hokkaido sugar beet with the addition of water only. The syrup is rich and dark and is fantastic poured over pancakes or ice-cream or used to make cakes and pastries.

Aqua 01 Sugar Syrup is made from non-centrifugal unrefined cane sugar from sugarcane grown in Okinawa with the addition of water only. This syrup has a clean, pure sweetness and it is ideal to sweeten cocktails and mixed drinks, iced tea or in pastries or cakes.

Original Escuminac syrup is a dark syrup produced at the end of the harvest. Intensely dark, it is purely delicious. With notes of rye, caramel and roasted sugar, it is perfect for your recipes; use it in simmered dishes, pastries or to spice up your salad dressings.

In Canada, maple syrup is available in five different categories. The main grading criterion is the colour, expressed in terms of the degree of light transmission. The later the harvest, the darker the syrup; it also becomes less complex, and has a more pronounced caramel flavour.

Escuminac main harvest syrup is the most popular in our range because it is readily available but also because of its complex and mild mouthfeel. This Canada Grade A maple syrup is both extra fine and richly flavoured. It's aromatic profile brings to mind warm, buttered brown sugar, date puree, English toffee and green anise with a subtle hint of curry. Flavorful, it is full-bodied, rounded, textured, distinct and syrupy, but not overwhelming, and has a very long finish. A grand cru!

Escuminac amber, a richly-flavoured syrup, is produced in very small quantities, making it rare. Golden in colour with bright highlights, it is the finest in our range of products. Produced exclusively with sap harvested during the first days of the sap run, rare Escuminac amber is an exceptional syrup with a smooth, velvety texture. It is light in the mouth, featuring a subtle caramel and honeysuckle bouquet with a hint of cinnamon and a lingering flavour.
